Always on the go

I've been so busy lately that I haven't even thought about updating my blog. I'm kind of just taking things day by day. Since leaving Virginia I've been commuting back and forth between my family. I never realized how difficult and overwhelming it is to try to visit everyone. But I'm doing my best. Jo and I have gone on so many adventures in the past couple of weeks. Many "firsts" together and I'm honestly having such a great time! I'm also doing my best to stay busy until we go back to VA just to help time move faster. We have so many plans for the next 2 months and I'm so excited to capture all of our adventurous moments! I'll do my best to compile a good amount of photos for any upcoming posts. I haven't had time to even open my laptop to upload them onto here. But soon enough I will! Can't wait to share what we've been up to along with all of our new experiences!

FAMILY OUTING IN OLD NAVY'S DENIM LINE

I think denim is an absolutely necessary fashion staple. It can give anyone a refreshing, lively look. The best part is that it isn't going out of style anytime soon! I love denim because it comes in so many different colors and washes which gives you a variety of ways to compose outfits for any occasion.


 I've teamed up with Old Navy to take a few of their denim items out for a spin. What better way to do it, than to do it with my two favorite people? My family! We had so much fun being able to put together these outfits and taking them out on a satur-date with us!

I absolutely LOVE them! They're comfortable, stretchy, and it fits my figure to my liking! It's a simple, yet bold look. You can pair it with any color top and you can go from casual dressy, to just plain casual with this item.

It went along with her flowy blouse and white shorts.  It was light, comfortable, and the wash-style made it easy to pair with many of her other outfits.

It's light, yet warm enough for chilly nights. Like most denim garments, it goes well with just about anything! You can pair it with bold colored pants, and a nice button up if you're looking for a more casual-dressy attire.

KBBQ Pork Belly Tacos Recipe


My husband and I have a deep love for good food. We both have very open taste palettes. So we're always up for trying or making new food. We religiously talk about how we want to open a restaurant together or to even start a food truck business in the future. The thought of being able to share the food we create, makes it something we seriously want to consider doing some day.

If there's something we love to eat, its TACOS! It's such a quick & easy meal to put together, and there's really no going wrong with it. You have so many options when it comes to switching up the fillings or the shells. You can either go simple & healthy, or go out of your comfort zone by spicing it up with your not-so-typical ingredients found in a taco. The fun thing about them is that it doesn't always have to be Mexican flavors. So it gives you a lot of room to get creative with your dinner!

That's why we've composed a few Korean side dishes also known as "ban-chan" into a taco! We weren't exactly sure how this was going to turn out, but we ended up very satisfied with the outcome! It has the perfect portions of sweet & salty with an acidic kick to it. I really love the crunchy textures and pop of flavor you get in each bite. If you're up for trying something new, you should definitely give this a shot! Hope you enjoy!


INGREDIENTS: 
*A few of these items were found in our local international market*

1. 2 lbs. Pork Belly 

2. KBBQ Chicken & Pork Marinade 

3. Pickled Radish 

4. Pickled Daikon & Carrots 

5. Cabbage Kimchi

6. Red Onion 

7. Cilantro 

8. Lime 

9. Sesame Seeds 

10. Corn Tortillas 

11. Yum Yum Sauce (Found in the oriental isle) 


METHOD:

1. Marinate pork belly in KBBQ marinade for about 2 hours. (We suggest waiting 2 hours but if you're trying to have a quick dinner, then marinating for about an hour will still give your pork belly flavor) 

2. After Marinating, bake the pork belly in oven with the marinade at 425 degrees fahrenheit for about 2 hours. (Just before the meat falls apart)

3. Prepare the side ingredients by mixing the Daikon, carrots and red onion together. 

4. Warm the tortillas on a skillet until you get your desired texture. 

5. Combine pork belly, kimchi, and pickled radish onto the tortilla

6. Then garnish with cilantro, sesame seeds, lime juice, and Yum Yum sauce. 

7. ENJOY!

Embracing Mother Earth


If there's something I want for Jolie, it's for her to have the same profound love that I have for nature. I do my best to get her to go outside to engage in outdoor activities as much as possible. I want her to see all the beauty the world has to offer.

I'm already so proud of Jo and how much she loves being able to explore new places. She literally stops to smell the flowers wherever we go. That's something I never want to change. 
I grew up playing outside. I remember how much I loved being able to sit in our grass, searching for ladybugs, climbing trees, and making wishes on dandelions.  I want Jolie to love and appreciate all the simple things like I did, and still do today. And so far, I think I'm doing a pretty good job.

SUMMER SUN

Despite the crazy rain we've been receiving on the east coast, It's definitely getting warmer and I'm excited to sunbathe, visit the beach, and indulge in some ridiculous amounts of ice cream. We took these photos a few weekends back and I never got the chance to blog them. 


Even though the water hasn't had the chance to warm up after winter, Jolie didn't care. She jumped right in and made the best of our day. Even if she came out shivering with blue lips. Lol, we sat there for about 45 minutes warming her up just so she can run back into the water. I swear, I think my child is part mermaid. If there's anyone who loves the water, it's definitely her. 


I carried this child inside me for 9 months, spent 16 hours in labor, pushed her out of my hoo-haa. All so then she can look and do everything just like her dad. 


Mini update: Our current plans are to move back home to the west coast for a few months, this upcoming June, while John finishes up work here. This is probably gonna be one of our last beach trips in VA until we're together again. So I figured it'd be appropriate to reminisce on this lovely day by turning it into a blog post. I already can't wait until we can have more weekends such as this one again. But until then, I'm gonna savor the little moments we have together.

MAMA'S DAY OUT (how to style Old Navy's basic tees)


     Once I became a mom, I quickly realized that all I ever want to do is throw on some leggings, a comfy tee, and call it a day. Being a parent has made it so much harder to invest more time into myself and my wardrobe. At times,  I even find myself standing in my closet, for what feels like forever, trying to put together a cute outfit to go about my day in. Since Mother's Day is only days away, I wanted to get together with a few of my favorite mamas and mamas-to-be to have a day to highlight and celebrate us. All while wearing clothes that make us feel fabulous!

I've partnered with Old Navy to put together a few outfits that compliment our different body shapes and personal taste. Stylish and comfortable is all I ever look for in clothing.   •  I've got on a blue & white striped boat-neck tee, with white denim overalls, paired with white wedges, cat-eye sunglasses, and a black wide brim fedora. Great for when you feel like wearing something bold & fun. 

  •  Christine is wearing a pink sueded tulip-back tee, with the front of her tee tucked in her white pixie chino shorts, camel-colored wedges, (not pictured above) a black leather jacket, and a bold silver necklace. A spicy outfit for a mama's night out! 

  •  Katie is rockin' a pale olive-colored relaxed dolman-sleeved tee, paired with printed drawstring pants, black wedges, bold jewelry, and a floppy brown sun hat. An outfit that's casual enough for a day at the beach, but dressy enough for lunch dates with the girls.

  • April has on an oversized nude-colored drapey V-neck tee, that is knotted above her baby bump. Along with a black midi pencil skirt, black block heels, and a bold necklace. This could easily be paired with a blazer or cardigan making this outfit business casual, to bridal party appropriate.

Peanut Butter & Chocolate Granola Cups Recipe

I've always wanted to make my own granola bars at home since they're pretty pricey at the stores. I really don't want to have to pay anywhere from $4-5 for 6 bars per box, when I can make them in bulk here at home for less. I started experimenting this morning with the ingredients I already had in my pantry. To my surprise, they came out so much better than I expected since I wasn't even sure if I was doing it right. I tried my best not to go online for assistance by looking up recipes. So instead I channeled my inner chef and worked some magic!
My husband is always leaving to work really early in the morning which gives him little to no time to grab any breakfast. I figured these would be easy and convenient for him to take on the drive to there. So if you're someone who is always in a rush in the mornings, these are the best grab-n-go breakfast bites that take very little effort to make the night before!


INGREDIENTS:

1. 1 1/2 cups Quick Cooking Oats 

2. 1/4 cup of 100% Pure Honey 

3. 2 tbsp Crunchy Peanut Butter 

4. 1 1/2 tbsp Chia Seeds

5. Chocolate (I used chocolate shells usually used on strawberries. But you can feel free to use whatever chocolate you prefer.) 

6. Greek Yogurt 

7. Raspberries

8. Strawberries 


METHOD  : 

1. Preheat your oven to 350 degrees fahrenheit.

2. In a mixing bowl combine all the ingredients together evenly. (minus the chocolate, unless you want to sprinkle chocolate chips in there then thats fine.)

3. Grease your cupcake trays and generously pack the granola into them. Firmly press the center to create a "cup" like mold into each granola cluster. 

4. Place them into your oven and let them bake for about 15-18 minutes or until they're golden brown.

5. Remove from the oven and let them cool completely before removing them from the trays. (to avoid having them break in the process) 

6. Once you've removed the granola cups, you may add your choice of yogurt into the center and top it with your choice of fruit! (I used plain greek yogurt) 

7. Enjoy!
