Beer Battered Fish Tacos Recipe

My husband and I were deciding what we wanted to eat last night and all we could think about was how long its been since we've had some good 'ol Californian Mexican food. I didn't want anything too heavy for dinner so we decided to get ingredients to make fish tacos!

INGREDIENTS (fish batter & toppings) :

1. 2.5 lbs White cod

2. 1 cup Beer (We used bud light)

3. 1 cup All-purpose flour

4. 1 tbsp. Garlic powder

5. Tortillas (we used corn)

6. Red /Green Cabbage

7. Limes

8. Tomatoes

9. Cilantro

Yogurt Sauce:

1. 1/2 cup plain non-fat yogurt

2. 1/2 cup mayo

3. 1 whole lime (juiced)

4. Minced Cilantro (optional)

(Just mix all ingredients in a bowl)

METHOD:

1. Start off by prepping all of your toppings. (My husband worked on the fish while I chopped the vegetables. But if you're doing this alone I suggest prepping your veggies first since it'll make your cooking process more organized.)

2. Heat your vegetable oil on med high heat.

3. Prepare your batter by combining the all-purpose flour and beer in a mixing bowl. Whisk well and generously coat your fish and put into oil and cook until batter is golden brown.

4. Heat up a separate non-stick pan and set the heat to med high to warm tortillas.

5. Combine all ingredients onto tortillas and top with yogurt sauce, a pinch of lime, and your choice of hot sauce.

6. Enjoy!
