Lime Cupcake Recipe

This recipe is extremely easy and doesn't require a lot of ingredients. I had extra white cake mix in my pantry and felt bad if it went to waste. So this post is mainly on how to make frosting! I personally don't like the store bought frosting since its hard to use in the piping bag. Its not as fluffy and doesn't create a peak on the cupcake which is what I prefer. Plus for me, presentation means a lot when serving to my guests. So I hope that you enjoy making your first batch of home made frosting! And if you didn't already know, you can pretty much incorporate any flavor to this frosting recipe by switching out the lime ingredients and adding in your own!

1. White cake mix

2. 1 cup butter

3. 6 cups of powdered sugar

4. 7 tsp lime juice (1/7 tsp is for the frosting)

5. Crushed almonds

1. Follow the directions on your cake mix box and replace the 1/2 cup of water with lime juice. (this step is completely optional. If you don't want the lime flavor to be too heavy since it'll already be in your frosting.)

2. When the cakes are finished baking, set them aside to let them cool completely. (if your cake is still warm it'll melt your frosting)

3. Add butter to a large mixing bowl and mix until its creamed.

4. Add your powdered sugar 1 cup at a time until its fully incorporated into the mix.

5. Add 1 tsp of lime into the frosting mix.

6. Transfer the mix into your piping bag and frost your cakes.

7. Garnish with crushed almonds

8. Enjoy!
